  1. Prepare 1 chicken breast, medium
  2. Get Garlic and salt
  3. Take Black or white pepper
  4. Prepare 2 tsp olive oil
  5. Take 1 head lettuce, rinsed, dried and chopped
  6. Take 1/2 cup cherry tomatoes, halved
  7. Get 1/2 cucumber sliced
  8. Prepare 1 ripe mango, diced
  9. Get 1 medium avocado, diced
  10. Take 1/4 cup parsley or coriander chopped
  11. Make ready Salad dressing
  12. Get 1/3 cup extra virgin olive oil
  13. Get 3 tbsp apple cider vinegar
  14. Take 2 tsp mustard
  15. Get 2 tsp honey
  16. Get 1 garlic clove minced
  17. Make ready 1 tsp salt
  18. Take 1/4 tsp black pepper or to taste

  1. Cut chicken breast in half lengthwise then season with garlic salt and pepper to taste and sautee in 2 tsp olive oil over medium heat until browned and cooked through (6min per side). Remove from pan, cool for 5 minutes then slice into strips against the grain.
  2. Gather all the other ingredients
  3. In a large salad bowl, add chopped lettuce. Top with halved cherry tomatoes, sliced cucumber, diced mango and avocado, thinly sliced purple onion, 1/4 cup parsley or coriander
