The ingredients needed to make Chunky Guinness Beef Stew:
  1. Take 750 grams Stewing Beef
  2. Take 400 ml Guinness
  3. Prepare 1 1/2 medium Brown Onions
  4. Prepare 500 grams Carrot
  5. Prepare 500 grams Swede
  6. Get 1 clove Garlic
  7. Prepare 2 Leaves of Bay
  8. Get 1 Beef Stock Cube
  9. Take 1 1/2 tbsp Flour
  10. Take 3 Beef Rib Bones (optional)
  11. Prepare 1 Salt and pepper to taste

This traditional Irish stew recipe can be cooked in the crock pot or oven. It freezes really well and can also be used as the base for a beef and Guinness pie. This hearty beef stew is made with lean boneless chuck that's cooked with carrots, parsnips and turnips and flavored with dark beer. But in many parts of the world including here in Australia and North America, Guinness Stew is more commonly made with beef.

Steps to make Chunky Guinness Beef Stew:
  1. Dice stewing beef to approx 1 inch cubes, then coat with flour. Fry the beef for a short while to sear, then set aside.
  2. Dice carrot and swede into approx 1 inch cubes and set aside. (nice and chunky)
  3. Cut onion into quarters, set aside.
  4. Smash garlic clove and chop finely.
  5. Mix all the aforementioned ingredients together into your slow cooker (add bones now if you have them)
  6. Pour over Guinness, then add your crumbled stock cube and bay leaves.
  7. Set slow cooker to HIGH, and leave for 1 hour.
  8. Once the hour has elapsed, give it a good stir and reduce heat to MEDIUM. Cook for a further 6-8 hours.
  9. Although not essential, stir occasionally. Check its consistency, add additional flour at 1 hour before serving. And then, sErVe!

I've made it with lamb and to be honest, I do prefer it with beef. Nothing speaks comfort like a good beef stew.

DHA and omega-3s are two things that really help the grey matter in your brain function a lot better. It’s true: eating a tuna fish sandwich can earnestly raise your mood.

Some grains are really wonderful for repelling bad moods. Teff, barley, millet, quinoa, etc are all good for helping you feel better. They help you feel full as well which can really help to improve your mood. Feeling starved can be a real downer! These grains can improve your mood since it’s easy for your body to digest them. They are simpler to digest than other foods which helps kick up your blood sugar levels and that, in turn, improves your mood.
