Okay, so in my humble opinion, when ordering General Tso Chicken, Sesame Chicken or Orange Chicken from a Chinese restaurant, the base sauce reicpe is the same, they simply add spice to the General Tso, sesame seeds to the Sesame Chicken, and orange peel (with a little spice) to the Orange Chicken. General Tso's chicken gets a makeover with this homemade marinade, crisp coating, and sweet and salty glaze. The ingredients needed to make General’s Chicken:
  1. Take 8 pieces chicken wings
  2. Take 1 piece eggplant, sliced thinly into 2x3 inch chips lengthwise
  3. Get 2 eggs, beaten
  4. Take 1/4 cup flour, or enough flour for chicken
  5. Get 1/4 cup flour for eggplant
  6. Prepare 4 cloves garlic, minced
  7. Make ready 1/4 chilli flakes (optional to include or add more if desired)
  8. Get 2 tablespoon rice wine
  9. Make ready 2 tablespoon soy sauce
  10. Make ready 2 tablespoon white sugar (adjust according to taste)
  11. Take 1/2 tablespoon vinegar (adjust according to taste)
  12. Prepare 2 teaspoon flour
  13. Take 1 teaspoon lemon or calamansi juice
  14. Get Cooking oil for deep fry of chicken and eggplant (fry separately)

General Tso's chicken 左宗棠雞 (pronounced ) is a sweet deep-fried chicken dish that is served in North American Chinese restaurants. The dish is named after Zuo Zongtang (also romanized Tso Tsung-t'ang), a Qing dynasty statesman and military leader, although there is no recorded connection to him nor is the dish known in Hunan, Zuo's home province. This is even better than the BEST I have had in my fave Chinese restaurant. To make the meal go quickly prep everything the day or night before and store in the fridge.

Instructions to make General’s Chicken:
  1. Prepare eggplant chips. Cut the eggplant into 2x3 inch lengthwise chips. Layout on top of a kitchen cloth, cover on top with another cloth to dry. Leave for around 15 minutes. Once dry, dredge in flour and set aside for frying.
  2. Prepare chicken and batter. Mix the eggs with flour, beat until well incorporated. Dip the chicken pieces in the batter and coat throroughly when ready to deep fry.
  3. Prepare the sauce. Mix the sauce ingredients in a bowl except for the garlic and chilli flakes. Sauce ingredients are vinegar, soy sauce, rice wine, sugar, flour, lemon / calamansi juice. Taste and adjust sauce according to taste. Set aside.
  4. Fry eggplant and chicken. Heat oil in deep fryer or wok. Deep fry eggplant chips until golden / dark brown in colour. Set aside. Remove excess oil. Deep fry chicken until golden brown in colour. Set aside.
  5. Serving and plating the dish. 5-10 minutes before serving, saute minced garlic and chilli flakes in frying pan. Add chicken to reheat. Stir to coat chicken pieces with garlic and chilli flakes. Add prepared sauce into pan and let simmer until sayce thickens, mixing well to chicken. Add eggplant chips and stir to coat chips with sauce as well.

To make this easy to understand I have changed the terms to cornstarch slurry and sauce. Slow Cooker General Tso's Chicken is a super easy meal with an amazing sweet and savory sauce with a little bit of heat! We love asian inspired meals here at our family so of course this was one of the first.
