  1. Take 1 whole chicken, cut into serving size
  2. Get 1 tbsp. oil
  3. Prepare 1 small onion minced
  4. Make ready 5 cloves garlic minced
  5. Make ready 4 tbsp. ginger minced
  6. Get 1 tbsp. fish sauce
  7. Make ready 1 cup sticky rice
  8. Prepare 6-7 cups water
  9. Get 3 chicken bouillon cubes
  10. Take salt & pepper for taste
  11. Prepare fried garlic bits
  12. Take 1/2 cup green onions chopped
  13. Take calamansi or lemon cut into wedges
  14. Get fish sauce
  15. Make ready 1/2 cup oil for garlic bits
  16. Prepare 1 head garlic minced

Arroz Caldo is a delicious Filipino chicken porridge made by cooking rice in chicken stock until it's thick and creamy. Redolent of ginger, and served with a sunny array of condiments such as Calamansi, boiled eggs, and crisp garlic, this classic comfort food is the perfect way to brighten up a dreary day, while warming you up from the inside out. Arroz caldo is a hearty Filipino congee made with chicken and rice and seasoned with onion, garlic, ginger, and fish sauce and topped with crunchy fried garlic.

Steps to make Chicken Arroz Caldo:
  1. Trim chicken of unwanted fat, rinse and drain well
  2. Take a pot and heat oil on medium, then add onions, ginger, & garlic. Cook for 4 minutes stirring regulary
  3. Add chicken and cook, stirring regularly, until lightly browned then add fish sauce and continue to cook for 1-2 minutes
  4. Add water and rice and bring to a boil then add bouillon cubes and stir to dissolve
  5. Lower heat, cover, and simmer, stirring occasionally until the rice has softened and the congee has thickened to desired consistency then season with salt and pepper to your taste then let it sit and cool for a bit
  6. While it's cooling take a small pan over low heat, add oil and cook garlic until golden and crisp then remove toasted garlic and drain on paper towel
  7. Serve in a bowl and garnish with green onions and toasted garlic. Add calamansi or lemon and additional fish sauce as necessary for your taste. Serve hot, and enjoy!
