The ingredients needed to make Chicken and Vegetables Baked in Foil:
  1. Take 1 Chicken thigh
  2. Take 1/2 medium Carrot
  3. Take 2 Green peppers
  4. Prepare 1/2 pack Maitake mushrooms
  5. Take 4 tbsp Mentsuyu (3x concentrate)
  6. Take 1 Sesame oil (optional)
  7. Make ready 1 dash Salt (for seasoning)
  8. Make ready 1 dash Pepper (for seasoning)
  9. Get 1 optional Lemon or yuzu pepper paste

Steps to make Chicken and Vegetables Baked in Foil:
  1. Cut the vegetables. Julienne the carrot and green peppers. Shred the maitake mushrooms apart with your hands to bite-size pieces.
  2. Slice the chicken diagonally into bite-size pieces. Sprinkle salt and pepper (for seasoning) on the chicken.
  3. Tear off two sheets of foil (30 cm long). Place half of the chicken (for one portion) on each sheet. Put the vegetables on top of the chicken.
  4. Pour 2 tablespoons each mentsuyu over the chicken. Sprinkle a little sesame oil if you like.
  5. Cover the chicken with another 30 cm long foil, and fold up the ends.
  6. Place the foil packet on a baking tray, and bake in the toaster oven or oven (preheated to 220℃) for about 25-30 minutes.
  7. Serve the packet on a plate. Open up the foil when you eat. Serve with a cut lemon or yuzu pepper paste if you like.
  8. This is good for packed lunches too.

Top with Parmesan cheese to complete this quick and easy weeknight dinner. Place the veggies on a sheet of greased tin foil then place the chicken on top of the veggies. Wrap them up with the foil and pop the packets either on the grill or in the oven. Cook until the veggies are tender and the chicken is perfectly cooked then serve and enjoy! Place one chicken breast on each sheet of foil.
