The ingredients needed to make Sprouted Moong Pulao:
  1. Get 3 cups Moong sprouts
  2. Get 2 1/2 cups Raw rice
  3. Make ready 1 1/2 tbsp Salt
  4. Make ready 1 tbsp Red chilli flakes
  5. Prepare 3 Green chillies slit
  6. Make ready 3 Dry red chillies
  7. Prepare 2 Bay leaves
  8. Get 2 tbsp Ghee
  9. Take 10 Curry leaves
  10. Take 2 Onions sliced
  11. Get 1 tsp Black Mustard seeds
  12. Take 1 tsp Cumin seeds
  13. Get 1 tsp Garam masala
  14. Prepare 1 Cinnamon stick
  15. Make ready 1 1/2 tbsp Garlic mince

Instructions to make Sprouted Moong Pulao:
  1. Soak rice in enough water for almost 20 minutes. Cook al dente adding half of salt.
  2. In a pan, heat ghee and add dry red chillies along with mustard and cumin seeds. Let them crackle a bit before adding garlic mince, curry leaves, bay leaves and cinnamon stick.
  3. Saute sliced onions now with ginger garlic mince until translucent. The raw smell of the onions should fade away before adding red chilli flakes and slit green chillies. You can add spices according to your choice
  4. Finally add the sprouts and stir gently to mix all. Cover and cook just for about 7-8 minutes. Do not cook more than that. The crunch should be retained. And sprouts need not be cooked for a long time. A simple stir fry is more than enough.
  5. After done, add cooked rice and mix well. Do it with very light hands without much pressure. Sprinkle garam masala for that lovely aroma. Serve this yummy pulao as it is or with any gravy or raita of your choice.
