The ingredients needed to make White Chicken Chili (crockpot):
  1. Get 2 lb Chicken, cooked and chopped
  2. Make ready 2 can Large butter beans, drained
  3. Prepare 3 can Navy beans, drained
  4. Prepare 2 tsp Cumin
  5. Get 2 tbsp Oregano
  6. Take 1 tsp Salt
  7. Prepare 2 tsp White pepper
  8. Get 1 cup White onion, finely diced
  9. Prepare 2 can Chicken broth (about 5 cups)
  10. Prepare 8 oz Diced green chilies
  11. Prepare 2 tsp Garlic powder OR 3-4 cloves minced garlic
  12. Take 3 tbsp Cornstarch, mix with one tablespoon water for thickening in the last hour

Add the beans, green chiles, garlic and chicken broth to the slow cooker and stir it all around. Stir in chicken stock, green chiles, beans, onion, garlic, cumin and oregano; season with salt and pepper, to taste. Remove chicken from the slow cooker and shred, using two forks. The seasonings are a pretty standard white chicken chili seasonings mix: chili powder, cumin, paprika, oregano, and salt + pepper.

Steps to make White Chicken Chili (crockpot):
  1. Combine all in a slow cooker (crockpot).
  2. Cook on high for 4-6 hours or on low for 8 hours or more. You may stir once or twice gently, but don't overdo it or the beans will start to break apart.
  3. Add cornstarch slurry in the last hour or so. Mix in well.
  4. Optional toppings: fresh cilantro or green onions, pepper jack cheese, sour cream, oyster crackers, crushed tortilla chips
