The ingredients needed to make Navy bean soup (φασολάδα)🇬🇷:
  1. Take 540 mg can of navy beans
  2. Take 1/2 carrot cut in half lengthwise and sliced in to 1-2 cm slices
  3. Prepare 1/2 celery stick sliced 1-2 cm slices
  4. Get 1 bay leaf
  5. Take 2 all spice balls
  6. Take 1 small onion chopped
  7. Get 1/2 tbs bocovo pepper (optional)
  8. Get 1 tsp Salt or to your liking
  9. Make ready Pinch black pepper
  10. Get 1 tbs tomato paste
  11. Prepare 10-12 parsley leafs lightly chopped
  12. Get 1/4 cup olive oil(olive oil is the secret here)
  13. Make ready 3 cups water and some extra boiled water to top up if needed

You'll know when the soup is done cooking because the beans will be very tender. Use a small piece of kitchen twine to tie parsley and thyme sprigs and bay leaf into a small bundle. Place soaked beans, herb bundle, ham hocks, carrot, onion, and garlic into a large soup pot or Dutch oven.   1. Ok here we go. In a pot ad the oil and the chopped onion and sauté till onion is tender do not let it get colour
  2. Now add the water and the rest of the ingredients except the tomato paste and bring to a boil
  3. Now you add the tomato paste and bring the heat to medium temperature and cook for about one hour
  4. At this point lower the heat to medium-low and cook without the lead till water reduces. I like to leave a bit extra water for dealing purposes 😋
