The ingredients needed to make Mushroom Soup:
  1. Make ready 25 grams dried porcini mushrooms
  2. Get 500 ml vegetable stock
  3. Take 60 grams exotic mushrooms
  4. Get 2 shallots, diced finely
  5. Make ready 3 garlic cloves, crushed
  6. Prepare 1 tbsp double concentrate tomato puree
  7. Make ready 1 carrot, use a peeler to peel into ribbons
  8. Make ready 25 grams butter
  9. Make ready 1 grams fresh coriander, finely chopped

Cook until the onion is soft and translucent, then add the mushrooms and the remaining butter. Line a baking sheet with parchment paper. Place mushrooms in a single layer onto the prepared baking sheet. In a large saucepan, heat butter over medium-high heat; saute mushrooms and onion until tender.

Instructions to make Mushroom Soup:
  1. Soak the porcini in 250ml of boiling water for 25mins. Then separate the stock and mushrooms. Keep the stock and chop the porcini.
  2. Melt the butter in a pan on a medium to low heat.
  3. Add the shallots, garlic and carrots to the pan and cook gently for 2-3mins.
  4. Add the coriander and all the mushrooms, cooking for another 2-3mins.
  5. Use a little bit of the vegetable stock to deglaze the pan. Then add in the porcini stock, tomato puree and vegetable stock. Season then bring up heat until the liquid begins to bubble.
  6. Cook for about 30-35mins on a low heat.

Place mushrooms in a single layer onto the prepared baking sheet. In a large saucepan, heat butter over medium-high heat; saute mushrooms and onion until tender. DIRECTIONS Cut the mushrooms into slices. Melt butter in large frying pan. Add in onions, garlic, and mushrooms.
