  1. Prepare For moth :-
  2. Take 1 1/2 cup moth beans
  3. Prepare 1 tbsp oil
  4. Prepare 1/2 tsp cumin seeds
  5. Get 1 tsp Ginger and green chillies finely chopped
  6. Take 1/2 tsp salt or to taste
  7. Get 1/2 tsp Red chilli powder
  8. Get 1 tbsp coriander powder
  9. Take 1 tsp Dry mango powder
  10. Prepare 1/4 tsp Turmeric powder
  11. Get For chaat:-
  12. Get 28 papdi
  13. Take 1 large peeled and chopped boiled potatoes
  14. Take 1 large chopped tomato
  15. Take 1 large chopped onion
  16. Prepare 1 Green chilli finely chooped
  17. Prepare 1 Green chilli finely chooped
  18. Take 1 cup curd
  19. Make ready 1 tbsp chaat masala
  20. Take 1 tsp Red chilli powder
  21. Take 1/2 tsp salt or to taste
  22. Get As required tamarind chutney as required
  23. Get Some papdi for garnish (as your choice)

Put Moth Beans in a large bowl and add enough water that rises well above the Moth Beans. Ensure moth beans are completely dried before refrigeration. Steps to make Sprout moth beans papdi chaat:
  1. Wash moth /matki soak in enough water overnight or for minimum 8 hours. - Drain and wash with water,drain all. Wet a clean cloth with water and squeeze the excess water from it. Take this samp cloth and keep the soaked moth beans in the cloth. Tighten this cloth and keep this cloth with the moth beans in it covered in a container for 1 or 2 days.
  2. After one day, you will see small sprouts and they will grow after 2 days. After 2 days wash them well with water to avoid any odour.
  3. Heat oil in the pressure cooker and add cumin seeds. - When cumin start crackling add asafoetida,chopped green chilli, ginger and curry leaves.
  4. Now add the sprouts and stir to mix well. Now add salt, turmeric powder, coriander powder, red chilli powder and dry mango powder mix well.Add 1/4 cup of water.
  5. Close the cooker and pressure cook for 2 whistles on medium When the pressure cool down completely then open the cooker. Moth is ready.
  6. Arrange papdi in a plate.place boiled potato pieces over it.also spread sprouts prepared and pour 3 tsp of tamarind chutney over the papdis.
  7. Sprinkle chilli powder, chaat masala. add in thick whisked curd over papri.also sprinkle finely chopped onions,green chilli and tomatoes.once again spread moth,curd and tamarind chutney.
  8. Sprouts moth papadi chaat is ready. serve papdi chaat immediately.
