The ingredients needed to make Crispy chicken with sautéed potatoes and porcini mushrooms:
  1. Take 4 chicken pieces
  2. Take 4 good quality potatoes
  3. Get 300 g porcini (any type OK)
  4. Make ready Knob butter
  5. Make ready to taste Salt
  6. Get Olive oil

Add the chicken pieces, skin-side down, and let the skin sizzle to golden brown. Spread the potatoes and garlic on four pieces of aluminum foil. Sprinkle the chicken with parsley and thyme. Season the chicken with salt and pepper.

Steps to make Crispy chicken with sautéed potatoes and porcini mushrooms:
  1. Peel, chop and par boil potatoes for about 5-6 mins in salted water. Drain and leave to cool. Put chicken in a baking tray, melt butter in microwave and brush all over the chicken. Salt to taste. Cook in the oven on high for 20 mins to make skin crispy then turn down to about 180 until cooked
  2. Chop mushrooms, cook in olive oil on medium heat until they release the water and start to fry, at this point, add potatoes and toss the pan
  3. Keep cooking and tossing the pan until it's all nice and crispy
  4. Enjoy :)

Sprinkle the chicken with parsley and thyme. Season the chicken with salt and pepper. Form an edge with the foil and pour in the wine. Close the foil well and place on a baking sheet. Add in the small button mushrooms around the chicken.
