The ingredients needed to make Mushroom Medley Risotto:
  1. Take 2 cups dashi
  2. Get 1 tbsp soy sauce
  3. Take Bunch Japanese mushrooms. I used pearl mushrooms
  4. Prepare 1 cup risotto
  5. Take Sprinkling of asian chicken powder
  6. Prepare Spring onion, black pepper and Parmesan
  7. Prepare White Wine
  8. Prepare Dried porcini mushrooms - 6-8 slices sliced up
  9. Get 2 tbsp mirin
  10. Make ready 1 small onion
  11. Prepare 3-5 cloves if garlic
  12. Prepare 2 tbsp butter

Steps to make Mushroom Medley Risotto:
  1. Soak the poricini in white wine. soak for about 20 min
  2. Mix the mirin, soy sauce to the dashi and let it boil for about 3-5 min
  3. Slice the asian mushrooms and add it to the stock. Let it simmer
  4. Chop the onions and garlic. Use another pot and melt the butter. Mix in the onions and garlic into the pot until soft. Do not let it brown
  5. Slice the hydrated porcini mushrooms into pieces
  6. Add the rice into the pot and stir. Add the wine that was used to hydrate the porcini mushrooms. Let the alcohol evaporate
  7. Slowly add the stock into the rice pot and let the rice absorb the stock. Cook until the rice is soft. If it's not to your desired taste, please add chicken powder. I cooked it over a medium heat.
  8. Plate the risotto and add as much spring onion/ parmesan and black pepper.

Some grains are really wonderful for driving away bad moods. Quinoa, millet, teff and barley are all really great for helping raise your happiness levels. These grains fill you up better and that can help elevate your moods as well. It’s not hard to feel depressed when you feel hungry! The reason these grains are so wonderful for your mood is that they are not difficult for your body to digest and process. They are easier to digest than other foods which helps bring up your blood sugar levels and that, in turn, improves your mood.
