  1. Prepare 130 grams sorghum, GF oat or brown rice flour
  2. Get 100 grams cornstarch or potato starch (not flour)
  3. Get 60 grams millet flour
  4. Make ready 60 grams buckwheat flour or cornmeal
  5. Make ready 30 grams quinoa or almond flour

This flour mix is the base for my gluten free sourdough sandwich bread. I have a different flour mix for gluten free cookies, muffins and other baked goods. It is softer and doesn't use bean flour. Each gluten free flour has its own hydration ratio.
