  2. Take 1 small onion
  3. Prepare 1 courgette
  4. Get 150 g smoked pancetta lardons
  5. Make ready 1/2 tsp Italian seasoning
  6. Prepare to taste Salt and pepper
  7. Take 1 clove garlic (minced)
  8. Take 1 tbsp tomato purée
  9. Prepare 400 g gnocchi
  10. Make ready Dash balsamic vinegar

  1. Soften onion and garlic in a saucepan with a little oil. Add pancetta Lardons, chopped courgette and tomato purée.Cook for 4-5 minutes. Add splash of balsamic vinegar
  2. Bring some water to the boil in another pan then add the gnocchi, boil for 3 minutes.
  3. Season the pancetta and bacon mixture then add Italian seasoning and passata, allow to simmer for 5-10minutes.
  4. Drain gnocchi then stir into the sauce mixture.
