  1. Get 1/4 cup chopped carrots
  2. Make ready 1/4 cup chopped beans
  3. Get 1/4 cup peas
  4. Prepare 1/4 cup cleaned cauliflower
  5. Take 1/4 cup peeled and cut potato cubes
  6. Take 2 cups coconut milk
  7. Take 2 medium size onions sliced
  8. Make ready 6 slit green chillies
  9. Take as required Curry leaves few
  10. Take 1 Bay leaf
  11. Get 1/2 inch Cinnamon
  12. Take as per your taste Salt
  13. Prepare 2 tsp Coconut Oil

Instructions to make Vegetable Stew:
  1. Place a curry pan in the stove. Switch on the flame. Add oil to it.
  2. Once the oil gets heat add Cinnamon and Bay leaf. Fry it.
  3. Add onions,green chillies and curry leaves. Fry it until onions becomes translucent.
  4. Add all the vegetables. Then add little salt for vegetables and water. Cover and cook the vegetables for 15mins.
  5. Atlast add the coconut milk and check for salt to be added or not. You can also add 2nd and 3rd coconut milk. Leave it to boil only once and switch off the flame.
  6. Vegetable stew is ready. Serve it with Aapam and Idiyappam.
