The ingredients needed to make Light and Fluffy Meatballs:
  1. Get 300 grams Ground pork
  2. Take 1/2 tbsp ☆ Grated ginger
  3. Make ready 1 tbsp ☆ Sake
  4. Take 1/2 tbsp ☆ Soy sauce
  5. Prepare 1 dash ☆ Salt and pepper
  6. Prepare 1 Egg
  7. Make ready 1/3 block Tofu
  8. Get 1/2 Onion
  9. Take 2 tbsp Katakuriko
  10. Prepare 3 tbsp Ketchup
  11. Get 3 tbsp ♦ Sugar
  12. Make ready 3 tbsp ♦ Vinegar
  13. Get 1 tbsp ♦ Sake
  14. Prepare 1 tsp ♦ Soy sauce
  15. Get 1 tsp ♦ Oyster sauce

Adding the water to the meat mixture keeps the meatballs light and almost fluffy. I like to drop them directly into the simmering tomato sauce but you can also brown them lightly in the oven before adding to the sauce. Bread soaked in some form of liquid puffs up when cooked, creating little air pockets that makes meatballs extra soft. It works far better than ordinary breadcrumbs which actually has the tendency to make meatballs tough little balls (panko breadcrumbs is ok though), and the Italians have been doing this for years.

Instructions to make Light and Fluffy Meatballs:
  1. Finely chop the onions. Beat the egg. Drain the tofu lightly.
  2. Add the ☆ ingredients to the ground pork and mix together. Add the beaten egg in 2 to 3 batches, mixing between additions.
  3. Add the chopped onions, as well as the tofu, crumbling it as you mix it in. Mix in the katakuriko and the hamburger mixture is done.
  4. Set the frying oil (not listed) to 340F/170℃. Form round meatballs with spoons, and drop them into the oil to deep fry.
  5. As long as the meatballs are nicely browned, they don't have to be cooked all the way through (they'll be simmered later on). I made 21 meatballs with the amounts indicated this time.
  6. Mix the ♦ ingredients with 500 ml of water.
  7. Heat up a tablespoon of oil in a deep pot, and cook 3 tablespoons of ketchup until fragrant (watch out for the oil spitting).
  8. When it's fragrant, add the combined ingredients from Step 6 and the meatballs.
  9. All you need to do now is simmer. You may think there's too much liquid in the pan, but it's fine. Keep simmering over high heat.
  10. Shake the pot occasionally to coat the meatballs evenly. The sauce will reduce in about 15 minutes.

My new favorite pizza restaurant (Pizzeria Stella in Philadelphia, if anyone is nearby!) makes incredible meatballs. They are baseball sized, doused in a very simple tomato sauce, and are somehow light and fluffy as well as richly flavored (so you don't necessarily feel like you've eaten a baseball, and can move on to pizza). Here's the challenge: The panade (that soaked-bread mixture) is essential for light and moist meatballs, but it's very difficult to mix it in thoroughly without over-beating the meat.

Information on How to Boost Your Mood with Food

Most of us think that comfort foods are terrible for us and that we must keep away from them. If your comfort food is candy or junk food this can be true. Other times, comfort foods can be very nourishing and good for us to consume. There are several foods that really can raise your moods when you eat them. When you are feeling a little down and are needing an emotional pick-me-up, try a few of these.

Eggs, believe it or not, are fantastic for helping you fight depression. Just see to it that you don’t throw away the egg yolk. Whenever you would like to cheer yourself up, the egg yolk is the most important part of the egg. Eggs, the yolks particularly, are rich in B vitamins. These B vitamins are wonderful for helping to elevate your mood. This is because they help in bettering the function of your neural transmitters, the components of your brain that dictate your mood. Try eating some eggs to cheer up!

Make several trail mix of nuts or seeds. Almonds, cashews, peanuts, pumpkin seeds, sunflower seeds, etcetera are all good for raising your mood. This is because seeds and nuts have a lot of magnesium which raises your brain’s serotonin levels. Serotonin is the “feel good” chemical substance that tells your brain how you feel all the time. The more of it in your brain, the happier you’ll feel. Nuts, on top of elevating your mood, can be a superb source of protein.

Cold water fish are good if you wish to feel happier. Tuna, trout, mackerel, herring and wild salmon are all full of omega-3 fatty acids and DHA. Omega-3 fatty acids and DHA are two things that improve the quality and the function of your brain’s gray matter. It’s the truth: consuming tuna fish sandwiches can actually help you battle your depression.

It’s not hard to fight your bad mood when you are eating grains. Millet, quinoa, barley, etc are great at helping you feel happier. They help you feel full as well which can truly help to better your mood. Feeling starved can actually make you feel terrible! These grains can help your mood elevate since it’s not at all difficult for your body to digest them. They are easier to digest than other foods which helps raise your blood sugar levels and that, in turn, elevates your mood.

Green tea is excellent for moods. You just knew green tea had to be included in this article, right? Green tea is rich in a particular amino acid known as L-theanine. Studies show that this particular amino acid can actually induce brain waves. This helps improve your mental acuity while having a relaxing effect on the rest of your body. You already knew that green tea helps you be healthier. And now you are aware that green tea can help you be happier too!

As you can see, you don’t need to stuff your face with junk food when you want to feel better! Try some of these hints instead.
