The ingredients needed to make Jowar Kuzhipaniyaram (Sola paniyaram):
  1. Make ready 1 cup Jowar White
  2. Take 1 cup rice Idli
  3. Get 1/3 cup Urad dal
  4. Get 1 tsp Fenugreek seeds
  5. Prepare 2 tsps Salt
  6. Take Oil - as needed
  7. Take 1/2 tsp Mustard seeds
  8. Take 1/4 tsp Urad dal
  9. Make ready 1/4 tsp Bengal gram dal
  10. Get 7 - 8 Curry leaves
  11. Make ready 1 Onion - finely chopped
  12. Make ready 2 tbsps Coriander leaves
  13. Get 1 Green chilli - finely chopped (Optional)

Steps to make Jowar Kuzhipaniyaram (Sola paniyaram):
  1. Wash and soak jowar and idli rice separately for 5-6 hours
  2. Wash and soak urad dal and fenugreek seeds together for 2-3 hours
  3. First, grind the soaked urad dal and fenugreek into a smooth batter. Transfer to a large bowl
  4. Then grind the soaked jowar and idli rice separately into a coarse batter. Mix all the three batters together along with salt.
  5. Keep the batter covered and allow it to ferment for atleast 8-10 hours or overnight
  6. Take half of the batter in a separate bowl and mix it well
  7. In a pan, heat 3 tsp oil. Add mustard and allow it to splutter
  8. Add urad dal, bengal gram dal and curry leaves. Let the dals turn light brown
  9. Add onions, green chilli and a little salt. Fry for 2-3 minutes till onions turn light pink
  10. Add coriander leaves and give it a quick stir. Switch off the flame
  11. Add this mixture to the batter bowl and mix well
  12. Heat the kuzhipaniyaram pan (appe pan). Add few drops of oil in each hole
  13. Pour the batter slowly till 3/4th of the hole is filled. Fill all the holes with the batter
  14. Cover the pan and cook in medium flame for 3-4 minutes
  15. Then flip the paniyarams slowly with a spoon and let them cook on the other side for 2 minutes
  16. Take the paniyarams out and serve them hot with a tangy tomato chutney
