The ingredients needed to make Sooji Paniyaram:
  1. Prepare 1/2 cup semolina sooji, coarse
  2. Prepare 1/2 cup rice flour
  3. Get 1/2 cup yoghurt curd, dahi
  4. Take 1/4 cup water or as required to get dropping consistency of batter
  5. Make ready 1/4 tsp cooking soda
  6. Make ready 2 tbsp onion finely chopped
  7. Take 2 tbsp coriander washed and finely chopped
  8. Make ready 1 tsp curry leaves washed and finely chopped
  9. Take 1 tsp cumin seeds
  10. Get 1/4 tsp Asafoetida
  11. Get 1 small green chilli finely chopped
  12. Prepare 1 tsp ginger grated
  13. Get 2 tbsp carrot grated
  14. Make ready To taste salt
  15. Take 2 tbsp oil for greasing and cooking

Instructions to make Sooji Paniyaram:
  1. In a bowl add semolina and rice flour. Mix well. Add grated carrots, onions, chopped coriander, grated ginger, green chilli, curry leaves and curd. Mix well and add cooking soda, soda and cumin seeds.
  2. Mix well and keep aside for 5-10 minutes.
  3. Heat and grease the paniyaram pan. Put a tbsp of batter in each part of the pan. Cover the pan and let it cook for 7 minutes.
  4. Gently flip them. Cover and cook on other side for 3 minutes. After three minutes the paniyaram are done.
  5. Remove the paniyaram. Serve hot with chutney of your choice and tea or coffee.

It is a simple recipe and taste really delicious. The paniyaram turns out so soft and fluffy. They can be packed in kids tiffin, served as an evening snack or even in birthday parties. Once the mustard seeds starts to splutter, drop this mix in to the sooji batter. This gives the paniyaram's a very earthy flavor which can only come from mustard seeds.
