The ingredients needed to make Unstuffed Peppers Skillet:
  1. Prepare 1 tbsp vegetable oil
  2. Take 1/2 lb ground beef or turkey
  3. Make ready 1 medium onion, chopped (1/2 cup)
  4. Take 1/2 tsp dried basil leaves, crushed
  5. Prepare 2 cup V8 Vegetable juice
  6. Prepare 1/4 tsp garlic powder
  7. Make ready 1/4 tsp salt , or to taste
  8. Make ready 1/2 cup uncooked regular long-grain white rice
  9. Take 2 medium green peppers, cut into 1 inch pieces (2 cups)

VEGGIES: Add mushrooms, diced zucchini or other squash, frozen veggies. Preheat a large, non-stick skillet over medium heat and add beef, onion, garlic, salt, and black pepper. Cook until beef is browned and cooked through, stirring to crumble. Drain if needed (although if using very lean beef, you likely won't need to).

Instructions to make Unstuffed Peppers Skillet:
  1. Heat the oil in a 10 inch skillet over medium heat. Add the meat, onion, and basil and cooked until the meat is browned. Stir often to separate the meat. Pour off any fat.
  2. Stir the juice and rice in the skillet. Stir in garlic powder and salt. Heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes.
  3. Stir the peppers into the skillet. Cover and cook for 10 more minutes or until the rice is tender and most of the liquid is absorbed.

Cook until beef is browned and cooked through, stirring to crumble. Drain if needed (although if using very lean beef, you likely won't need to). Add spaghetti sauce, using water to swish the residual sauce out of the jar. Next add in peppers, Italian seasoning and pepper.
