  1. Take 1 cup green bell pepper (chopped)
  2. Prepare 1/2 cup onion (chopped)
  3. Make ready 2 clove garlic (minced)
  4. Make ready 1 tbsp vegetable oil
  5. Prepare 15 oz kidney beans (1 can, rinsed, drained)
  6. Take 15 oz pinto beans (1 can, rinsed, drained)
  7. Take 6 oz vegetable juice (1 small can V8)
  8. Take 4 oz diced green chile peppers (1 small can)
  9. Make ready 1 tsp chili powder
  10. Make ready 1 tsp ground cumin
  11. Get 8 1/2 oz corn muffin mix (1 package of Jiffy)
  12. Prepare 1/2 cup shredded cheddar cheese
  13. Prepare 1/4 cup snipped fresh cilantro
  14. Take 1 large egg
  15. Prepare 1/3 cup milk

As the onion gets soft, add the diced bell pepper and minced garlic. Add cheese and cilantro to muffin mix, stirring just until combined. Spoon cornbread mixture evenly over top of bean mixture. If desired, serve with salsa and sour cream.
