  2. Take 1 lb Italian Sausage
  3. Take 2 cup Onion (diced)
  4. Prepare 2 cup Carrots (chopped)
  5. Take 2 cup Celery (chopped)
  6. Make ready 6 clove Garlic (minced)
  7. Prepare 2 can Red Kidney Beans with liquid (low sodium) 15 oz each.
  8. Get 2 can Small White Beans with liquid (low sodium) 15 oz each.
  9. Prepare 4 can Diced Tomatoes (no salt added) 14.5 oz each
  10. Make ready 2 can Tomato Sauce (no salt added) 15 oz each.
  11. Prepare 1 can Beef Broth (lower sodium) 14.5 oz
  12. Get 3 cup V8 Juice (low salt)
  13. Get 2 tbsp White Vinegar
  14. Prepare 2 tsp Oregano
  15. Take 2 tsp Basil
  16. Take 1 tsp Black Pepper
  17. Get 1 tsp Thyme
  18. Take 1 lb Ditali Pasta

Steps to make Ultimate Pasta Fagioli:
  1. Brown ground beef and sausage in skillet. Put in large soup pot. Keep fat in skillet.
  2. Add onion, carrots and celery to skillet. Saute for 10 minutes. Add garlic with about 3 min to go. Add to pot
  3. Add remaining ingredients to pot, except the pasta. Simmer for 1 hour.
  4. Cook pasta in boiling water until it is al dente. Rinse in cold water.
  5. Add cooked pasta to bowl before adding soup.

What I love most is that it is affordable easy and delicious. The only bad thing is that it doesn't make a lot. I make a more tasty and complex pasta fagioli but this one was pretty good for the time it took. I also used a big can of cannelli beans. overall pretty tasty and really easy to make!
