  1. Make ready 2 lb roast, round steak, ground beef
  2. Make ready 2 medium potatoes, diced
  3. Make ready 1 medium onion, minced
  4. Take 3 boullion cubes, beef
  5. Make ready 2 stalks celery and leaves
  6. Get 2 tbsp Maggi seasoning…. can use soy sauce
  7. Get 2 tsp garlic powder
  8. Get 32 oz of beef broth or water
  9. Take 1 can mixed veggies
  10. Take 1 cup okra, optiinal
  11. Take 1 can diced tomatoes, 28 oz
  12. Make ready 3 cup veggie juice… i used V8
  13. Take 1 envelope dry onion seasoning mix, optional
  14. Prepare 2 tbsp white sugar to counter act the tart taste of the tomatoes

Heat olive oil in a large pot over medium heat. Warming cup of instant creamy vegetable soup mix with potato, onion, pea and carrot. Just add boiling water, stir and enjoy with croutons sprinkled on top. Instructions to make Ms. Kipper's Veggie Soup:
  1. put the first 7 items in the pressure cooker…. sprinkle with pepper… the bouillon cubes are salty….. put 1/2 the water or bouillon in the pressure cooker…. save the other half. I cut the meat into small cubes …. I saved the fat that was cut off and also put in the pressure cooker for flavor…
  2. I cook the meat, potato, celery mixture for 40 min…. so that meat it very tender..
  3. **** IF YOU USE GROUND BEEF…. put the browned ground beef in stock pot with the other ingredients from the first 7… allow to come to a boil then turn down to simmer for about 20 minutes…
  4. after the meat is done… whether ground beef or pressure cooker.. put the remaining ingredients in the stock pot….. add remaining water or broth…. let get hot and add your meat mixture….. simmer for 20 minutes…. if using the pressure cooker 7 more mins.
  5. taste and adjustment salt and pepper
  6. *** this is one of those dishes that gets better the second day
  7. **** I serve with biscuits…
