The ingredients needed to make Turkey veggie soup:
  1. Take 2 zucchini sliced and halved
  2. Take 2 yellow squash sliced and halved
  3. Make ready 1 small onion chopped
  4. Make ready 2 handfuls baby carrots chopped
  5. Prepare 4 garlic cloves chopped
  6. Prepare 3 celery stalks chopped
  7. Take 1 can black beans
  8. Prepare 1 can italian diced tomatoes
  9. Prepare 1 cup split green peas (softened)
  10. Get 3/4 cup brown rice
  11. Get 4 cup vegetable broth
  12. Get 3 cup V8
  13. Get 1 tbsp italian seasoning
  14. Take 1 tsp thyme
  15. Prepare kosher salt fresh ground pepper
  16. Prepare 1 lb ground turkey meatballs
  17. Take 1/3 cup italian bread crumbs
  18. Make ready 1 egg
  19. Take salt and pepper

Instructions to make Turkey veggie soup:
  1. First chop up all the veggies. Use a large pot and put a couple tablespoons olive oil in it. Add carrots celery onion and garlic first. After about 5minutes add squash zucchini black beans and diced tomatoes. Add your green peas and the brown rice. Heat should be on medium.
  2. Next add your vegetable broth. Keep on medium and put the lid on. Wait about an hour. In the meantime you can make your turkey meatballs.
  3. Mix turkey bread crumbs egg salt and pepper. Heat skillet on medium heat. Form very small balls and cook about 5-7 min until done. Add to soup.
  4. At this point your soup may start to get pretty thick. You can add the V8 to thin it out. Or use more broth if you wish. I just had V8 so I decided to try it. Just add your spices salt and pepper as it cooks. May need to add more depending on how strong you like them.
  5. Let simmer for another hour or so. Until the green peas are completely soft.
  6. When done sprinkle with parmesan cheese or cheese of your choice and enjoy.

Place whole turkey in a large stockpot. Add bay leaves, salt and pepper. Heat stock pot on medium heat and add the olive oil. Ladle the soup into warmed bowls and sprinkle with the parsley or cheese.
